Kanikama Miso Soup

A light and comforting Japanese miso soup made with delicate crab sticks and silky soft tofu. This simple yet flavorful soup is perfect as a starter or a soothing accompaniment to any Japanese meal.


Ingredients

  • 2 Japanese crab sticks, cut into bite-size pieces

  • 2 cups dashi stock

  • 1½ tablespoons miso paste (white or awase miso recommended)

  • 100 g silken tofu, cubed

  • 1 tablespoon spring onions, finely sliced


Instructions

  1. Heat the Dashi Stock

    In a small saucepan, heat the dashi stock over medium heat. Do not let it boil.

  2. Add the Crab Sticks

    Add the crab stick pieces to the dashi stock and simmer gently for 1–2 minutes.

  3. Add the Tofu

    Carefully add the silken tofu cubes and heat gently to avoid breaking them.

  4. Incorporate the Miso Paste

    Place the miso paste in a small bowl. Add a few tablespoons of warm dashi and mix until smooth. Gently stir the miso mixture back into the soup. Do not boil after adding miso.

  5. Finish and Serve

    Remove from heat and garnish with spring onions. Serve immediately.

  • Serve as a starter before sushi or donburi

  • Pair with steamed rice and grilled fish

  • Enjoy as a light comfort meal on its own


Tips

  • Always dissolve miso paste separately to keep the soup smooth

  • Avoid boiling after adding miso to preserve its flavor and nutrients

  • Add wakame seaweed for extra texture and umami
