Servings: 2 - 3 Portions Ingredients For the base: 2 cups Japanese rice (cooked, warm) 1 tbsp butter 1 tsp soy sauce For the fish roll: 3  Seafoodking fish rolls, sliced into bite-sized pieces For the mentai sauce: 4 tbsp mayonnaise 2 tbsp chili sauce (adjust to taste) 1 tsp soy sauce 1 tsp lemon juice 1–2 tbsp tobiko (optional, for authentic flavor) For topping: Mozzarella cheese, shredded (optional) Nori sheets, cut into strips Chopped spring onions Instructions Prepare the rice base Mix warm rice with butter and soy sauce until well combined. Transfer into a heatproof baking dish and gently press to form an even layer. Add the fish roll Arrange sliced fish roll evenly over the rice. Make the mentai sauce In a bowl, combine mayonnaise, chili sauce, soy sauce, lemon juice, and tobiko. Mix until smooth and creamy. Assemble Spread or pipe the mentai sauce generously over the fish roll layer. Sprinkle mozzarella cheese on top if using. Bake / Torch Bake in a preheated oven at 180°C for 10–12 minutes, or until heated through. For a golden finish, torch the top until slightly caramelized. Garnish & serve  Top with nori strips and chopped spring onions.  Serve warm. Chef Tips Use a blowtorch for that signature “aburi” look—more appealing for content. Adjust chili sauce level depending on your target market (mild vs spicy). Serve with extra nori sheets for wrapping (DIY handroll style).
