A light and comforting Japanese miso soup made with delicate crab sticks and silky soft tofu. This simple yet flavorful soup is perfect as a starter or a soothing accompaniment to any Japanese meal. Ingredients 2 Japanese crab sticks, cut into bite-size pieces 2 cups dashi stock 1½ tablespoons miso paste (white or awase miso recommended) 100 g silken tofu, cubed 1 tablespoon spring onions, finely sliced Instructions Heat the Dashi Stock In a small saucepan, heat the dashi stock over medium heat. Do not let it boil. Add the Crab Sticks Add the crab stick pieces to the dashi stock and simmer gently for 1–2 minutes. Add the Tofu Carefully add the silken tofu cubes and heat gently to avoid breaking them. Incorporate the Miso Paste Place the miso paste in a small bowl. Add a few tablespoons of warm dashi and mix until smooth. Gently stir the miso mixture back into the soup. Do not boil after adding miso. Finish and Serve Remove from heat and garnish with spring onions. Serve immediately.
