Chikuwa Teriyaki

This Chikuwa Teriyaki is a simple yet flavorful dish made with Japanese fish cake sautéed in a rich homemade teriyaki sauce. It’s perfect for busy weeknights, beginner cooks, and anyone looking for a delicious seafood-based side dish that pairs beautifully with warm rice.

Ingredients

  • 5 pieces chikuwa (Japanese fish cake), sliced diagonally

  • 2 cloves garlic, minced

  • ½ onion, thinly sliced (optional but recommended)

  • 3 tablespoons teriyaki sauce (store-bought)

  • 1 tablespoon sweet soy sauce (kecap manis)

  • 1 teaspoon oyster sauce

  • 3 tablespoons water

  • 1 teaspoon sesame oil (optional)

  • 1 teaspoon cooking oil

  • Sesame seeds (optional garnish)

  • Chopped green onions (optional garnish)


Instructions

1. Prepare the Chikuwa

Slice the chikuwa diagonally into bite-sized pieces. This helps create more surface area for the sauce to coat evenly.


2. Sauté the Aromatics

Heat cooking oil in a pan over medium heat.Add minced garlic and sliced onion. Sauté until fragrant and slightly translucent (about 1–2 minutes).


3. Cook the Chikuwa

Add the sliced chikuwa into the pan.Stir-fry for 2–3 minutes until slightly golden on the outside.


4. Add the Teriyaki Sauce

Pour in:

  • Teriyaki sauce

  • Sweet soy sauce

  • Oyster sauce

  • Water

Stir well to combine.

Let it simmer for 3–5 minutes until the sauce thickens and coats the chikuwa evenly.


5. Finish

Drizzle sesame oil for extra aroma (optional).Turn off the heat and garnish with sesame seeds and chopped green onions.


Serving Suggestions

  • Serve hot with steamed white rice.

  • Pair with a fried egg for a simple rice bowl.

  • Add stir-fried vegetables for a balanced meal.

  • Great as a lunchbox (bento) side dish.


Cooking Tips

  • Do not overcook the chikuwa — it only needs to be heated through.

  • If you prefer a thicker sauce, simmer a bit longer or add ½ teaspoon cornstarch mixed with 1 tablespoon water.

  • Adjust sweetness by reducing or increasing sweet soy sauce.
