Crispy Fried Vegetable Fish Ball Sambal Matah Bowl

A fresh and spicy Indonesian-inspired rice bowl featuring crispy SeafoodKing Fried Vegetable Fish Balls topped with vibrant Balinese sambal matah.
Ingredients (2 Servings)
Main:
8–10 pcs SeafoodKing Fried Vegetable Fish Balls
2 cups steamed white rice (warm)
1 soft-boiled egg (optional, halved)
½ cucumber, sliced
1 handful fresh lettuce or shredded cabbage
Sambal Matah:
5 shallots, thinly sliced
2 cloves garlic, finely sliced
2 bird’s eye chilies, thinly sliced (adjust to taste)
1 stalk lemongrass (white part only), very thinly sliced
3 tbsp cooking oil (heated until hot, not smoking)
2 tbsp fresh lime juice
½ tsp salt
½ tsp sugar
Optional: kaffir lime leaves, very thinly sliced
Instructions
Cook the Fish Balls
Deep fry SeafoodKing Fried Vegetable Fish Balls at 170–180°C for 3–4 minutes until golden and crispy. Alternatively, air fry at 180°C for 8–10 minutes. Slice into halves or thick pieces.
Make the Sambal Matah
In a bowl, combine shallots, garlic, chilies, and lemongrass. Add salt and sugar. Pour hot oil over the mixture (this will slightly cook and release aroma). Add lime juice and mix well. Taste and adjust seasoning (more lime for freshness, more chili for heat).
Tip: Let it rest for 10–15 minutes for deeper flavor.
Assemble the Bowl
Place warm rice in a serving bowl. Arrange crispy fish balls on top. Add fresh vegetables (cucumber + lettuce/cabbage). Spoon generous sambal matah over the fish balls. Add soft-boiled egg if using.
Finish with extra lime squeeze for brightness.
