Fish Bar Loaded Fries

Crispy golden fries topped with juicy fish bar slices, rich cheese sauce, and creamy mayo — a crowd-pleasing loaded fries recipe perfect for sharing, snacking, or upgrading your party menu.


Servings: 2 - 3 Portions


Ingredients

Main:

  • 400 g frozen French fries

  • 3 fish bars

  • Oil for frying (if deep frying)


Cheese Sauce:

  • 1 tbsp butter

  • 1 tbsp all-purpose flour

  • 250 ml milk

  • 100 g cheddar cheese, grated

  • ¼ tsp salt

  • ¼ tsp black pepper


Toppings:

  • 2 tbsp mayonnaise

  • 2 tbsp chili sauce or BBQ sauce

  • 1 stalk green onion, thinly sliced

  • Chili flakes (optional)


Instructions

1. Cook the Fries

Deep fry at 170–175°C for 3–4 minutes or until golden and crispy.Alternatively, bake or air fry according to package instructions.Set aside on a wire rack to keep them crisp.


2. Cook the Fish Bar

Pan-fry or air fry the fish bars until golden brown.Slice into bite-sized pieces.


3. Make the Cheese Sauce

In a saucepan over medium heat:

  1. Melt butter.

  2. Add flour and whisk for 1 minute to form a roux.

  3. Gradually pour in milk while whisking to avoid lumps.

  4. Cook until slightly thickened.

  5. Add grated cheddar, salt, and pepper. Stir until smooth and creamy.

If the sauce becomes too thick, add a splash of warm milk.


4. Assemble

  1. Arrange hot fries on a serving plate.

  2. Scatter sliced fish bar on top.

  3. Pour warm cheese sauce evenly.

  4. Drizzle mayonnaise and chili/BBQ sauce.

  5. Finish with green onion and chili flakes.


5. Serve Immediately

Best enjoyed while hot and crispy.

  • Double fry the fries for extra crunch.

  • Add crispy beef bacon bits for a heartier version.

  • For a spicy Korean twist, replace BBQ sauce with gochujang glaze.

  • Want it extra indulgent? Add a quick torch to melt the toppings slightly.
