Ingredients

The Broth Base:

  • 1 pack Seafoodking Lobster Balls.

  • 1 liter high-quality chicken or shrimp stock (clarified for a "consommé" look).

  • 2 cm ginger, bruised.

  • 1 stalk scallion, tied into a knot.

  • Salt and white pepper to taste.

  • A handful of baby bok choy or snap peas (for a vibrant pop of color).

The Aromatic Garlic Oil:

  • 5 cloves garlic, very finely minced.

  • 3 tbsp neutral oil (grape seed or canola).

  • A pinch of salt.


Instructions

  1. Prepare the Garlic Oil

    In a small cold pan, combine the minced garlic and oil. Heat over low-medium heat, stirring constantly until the garlic turns a uniform light golden brown. Immediately remove from heat and transfer to a small bowl to stop the cooking process. Set aside.

  2. Simmer the Broth

    In a medium pot, bring the stock, ginger, and scallion knot to a gentle simmer. Let the aromatics infuse for about 5–8 minutes.

  3. Cook the Lobster Balls

    Carefully add the Seafoodking Lobster Balls to the simmering broth. Cook for 3–5 minutes until they are heated through and begin to float.

  4. Blanch the Greens

    Add the baby bok choy or snap peas during the last 1 minute of cooking to maintain their crispness and bright green color.

  5. Seasoning

    Season with salt and white pepper. Taste and adjust. The goal is a clean, savory profile that doesn't overpower the seafood.

  6. Plating

    Using a clean, minimalist approach, place the lobster balls and greens in a deep bowl. Ladle the clear broth over them.

  7. The Finishing Touch 

    Drizzle a teaspoon of the golden garlic oil and some of the crispy bits over the center. Garnish with a few thin microgreens or a single sprig of cilantro for an elegant, photoshoot-ready finish.
