Long Fish Cake Sushi Bake

A creamy, savory sushi bake made with fluffy rice, crispy long fish cake, and rich mentai mayo, baked to golden perfection for an easy, crowd-pleasing comfort dish.


Servings: 2 - 3 Portions


Ingredients

Rice Layer:

  • 2 cups cooked Japanese rice (warm)

  • 1 tbsp rice vinegar

  • 1/2 tbsp sugar

  • 1/2 tsp salt


Fish Cake Layer:

  • 2 long fish cakes (diced small)

  • 1 tbsp oil (for pan-frying)


Mentai Sauce:

  • 3 tbsp mayonnaise

  • 1 tbsp chili sauce (or sriracha)

  • 1 tsp soy sauce

  • 1/2 tsp sugar


Toppings:

  • 1 tbsp shredded nori (seaweed)

  • 1 tbsp sesame seeds

  • 1 stalk green onion (sliced)


Instructions

  1. Prepare the Sushi Rice

    In a bowl, mix warm rice with rice vinegar, sugar, and salt. Stir gently until well combined. Set aside.


  2. Cook the Fish Cake

    Heat oil in a pan over medium heat. Add diced fish cake and cook until slightly golden and fragrant. Remove from heat.


  3. Make the Mentai Sauce

    In a small bowl, mix mayonnaise, chili sauce, soy sauce, and sugar until smooth.


  4. Assemble the Bake

    • Spread the seasoned rice evenly in a small baking dish

    • Add the cooked fish cake on top

    • Pour or pipe the mentai sauce evenly over everything


  5. Bake

    Bake in a preheated oven at 200°C for 10–15 minutes, or until the top looks slightly golden and bubbly.


  6. Add Toppings

    Remove from oven, then sprinkle with nori, sesame seeds, and green onion.


  7. Serve

    Serve warm. Best eaten with a spoon or wrapped in extra nori sheets.
