1 cup carrots, julienned
1/2 cup bean sprouts

1 tbsp soy sauce
1 tbsp sweet chili sauce
1 tsp lime juice
Warm water as needed
Option 2 — Chili Garlic Sauce

Instructions
Prepare the Otak-Otak
Pan-fry, air fry, or grill the Otak-Otak Singapore until lightly golden. Slice into thin strips or small bite-sized pieces. Set aside.
Prepare the Noodles
Cook vermicelli noodles according to package instructions. Drain and rinse with cold water.
Prepare the Rice Paper
Fill a shallow plate or bowl with warm water. Dip one rice paper sheet into the water for about 5–7 seconds until softened. Place it on a clean surface.
Assemble the Rolls
Layer lettuce, vermicelli noodles, cucumber, carrots, bean sprouts, herbs, and Otak-Otak Singapore in the center of the rice paper. Fold the sides inward and roll tightly like a spring roll. Repeat with remaining ingredients.
Make the Sauce
Mix all sauce ingredients together until smooth. Adjust consistency with warm water if needed.
