Spicy Miso Ramen Bowl with Otak-otak Jepang

A bold and comforting spicy miso ramen topped with Otak-Otak Jepang, springy noodles, mushrooms, and fresh greens—an easy Japanese-inspired bowl packed with rich umami and gentle heat.
Ingredients
For the Broth
750 ml chicken stock / water
2 tbsp white or red miso paste
1 tbsp soy sauce
1 tbsp chili oil / chili crisp
1 tsp sesame oil
2 cloves garlic, minced
1 tsp grated ginger
Main Ingredients
6 pieces of Seafoodking Otak-Otak Jepang, halved
2 portions ramen noodles
100 g shiitake mushrooms, sliced
2 baby bok choy, halved
2 soft-boiled eggs (optional)
Garnish
Chopped scallions
Sesame seeds
Extra chili oil (optional)
Nori strips
Instructions
1. Prepare the Broth Base
In a pot over medium heat, add sesame oil, garlic, and ginger. Sauté for 1 minute until fragrant.
2. Make the Spicy Miso Broth
Pour in chicken stock / water. Whisk in miso paste, soy sauce, and chili oil until fully dissolved. Bring to a gentle simmer.
3. Cook the Toppings
Add mushrooms and Otak-Otak Jepang into the broth. Simmer for 5 minutes.
Add bok choy during the last 2 minutes.
4. Cook Noodles
Boil ramen noodles separately according to package instructions. Drain well.
5. Assemble
Divide noodles into serving bowls. Ladle hot broth over noodles. Top with Otak-Otak Jepang, mushrooms, bok choy, and soft-boiled egg.
6. Garnish & Serve
Finish with scallions, sesame seeds, nori strips, and extra chili oil if desired.
Serve immediately while hot.
